If I were to choose between the three for a privacy hedge in an average sized lot, I'd choose Prunus caroliniana 'Compacta'. This is a highly useful and ornamental evergreen shrub with dense, compact foliage. Its hardy, lustrous, dark green foliage provides an excellent screen or background for mixed borders. It produces small, fragrant, ball-shaped blooms of creamy white which attract butterflies. This plant can be easily trimmed for a formal look, or, if untrimmed, will grow moderately fast to form an attractive hedge. It grows in full to partial sun and grows to 10 to 12 feet tall and 6 to 8 feet wide.
