Olive trees grow to about 25' wide at maturity so you'll want to plant your trees at least 25' apart. It's okay for the canopies to grow into one another if you want to plant them closer, but you'll need to do a little creative pruning as the branches grow into one another (removing crossing and rubbing branches to maintain health).
