How mature does epazote have to be to be effective against flatulence and how do you use it?

Epazote (Chenopodium ambrosioides) is an annual plant with mild-tasting green leaves that are used in traditional Mexican bean dishes to prevent gas. Generally a few fresh leaves are cooked with the beans. Alternately, the leaves can be dried and then added to the pot when the beans are cooking.
