Do I need to cut back/trim the vaiegata japanese pieris for the winter?

No, it should never be cut back. Pieris is a slow growing shrub that requires very little routine pruning. (The exception is to remove dead, broken or diseased branches which should only rarely occur.) It blooms on the old growth from the year before, so pruning in fall or early spring would remove the flower buds. Enjoy your Pieris!
