I have a recipe that calls for Scotch bonnet pepper. Can you tell me what that is or what to use as a substitute? Thank you.

Scotch Bonnet, or Chocolate Pepper, is from the Caribbean and used in making jerky. The color varies, but the heat goes on. They're part of the Habanero family. New colors have been recently introduced, including pink, yellow and red.
