I just planted your burgundy desert willow and want to train it as a tree. Are the roots going to get large and will they disrupt a nearby leach field? 8-10 feet away.Also, will I be able to grow plants under the canopy?

Burgundy desert willow makes an attractive small tree. It will have an open, airy canopy so growing other plants beneath it should not be a problem. The roots can be expected to grow mostly in the top 12-18 inches of soil and extend out about as far and the canopy is wide. I don't think the roots will invade a leach line that's 8-10' away. Leach lines are typically too deep to be bothered by most shrubs and perennials, especially if they are kept 8-10' away from the lines.
