I realize that named varieties of apples are usually if not always grafted onto a different root stock, but could they also be started by rooting a cutting? If so, how?

The type of rootstock that apples are grafted onto determines the size (and sometimes vigor) of the tree. If you started an apple tree from a cutting, it would probably not give satisfactory results. Instead of creating a whole new tree, why not graft cuttings of your favorite apple trees onto an existing apple tree? You can use a number of techniques for grafting new branches onto established trees; there are books explaining the process in detail. One such reference is: The Complete Book of Plant Propagation by Graham Clarke and Alan Toogood, published by Ward Lock, Cavendish Books Inc., Unit 5, 801 West 1st St., N. Vancouver, B.C.
