What would happen to a STOCK plant if you remove the developing flowers or cut off the top?

If you cut the flower stalk off of a Stock, it will develop side shoots which will produce additional flowers. The flowers will be smaller, but they'll still be there. Similar things happen to Delphiniums when you cut the main stalk off.
