I didn't water my root crops as much as I should have, and now they're bitter. The beets are about a half inch in diameter and the turnips are anywhere from a half an inch to an inch. If I water them more from now on, will they taste better, or should I reseed the whole thing?

It is too late to reseed the turnips for a spring crop, but you might be able to reseed the beets. You might want to check with your county extension for a more local opinion depending on your local weather and which varieties you are trying to grow. Both can be planted as a fall crop for late harvest, too.
