Lonnie,

Those pots sound a little small for such plants. You will need to water them often and in a wind the plant's foliage and taller stature may cause them to blow over. I woul suggest the sky pencil holly for its smaller stature although the palm may be more tolerant of dry conditions, but it wouldn't take your winter cold. Another option might be one of the boxwoods.
