It can take newly planted shrubs a few weeks to acclimate to their new surroundings so the wilting/drooping foliage may simply be an indication of this adjustment. Metrosideros likes well-draining soils so don't over water; one deep soaking per week is all your plants will require. If you're watering more often, you may be suffocating the roots by driving out the oxygen. Try adjusting your watering schedule, allowing at least the top inch of soil to dry out between thorough waterings. Best wishes with your new plants!
