Shoud I cut the flowers off my sedum after they have finished blooming?

Sedum doesn't generally need to be deadheaded; the flowers will fade and drop off all by themselves. If you want to pinch the stem just below the spent bloom, the plant will respond by producing two stems where one once was, which will give the plant a more evenly mounded appearance. The choice is up to you. Best wishes with your garden!
