I seen the most unusual tree while visiting in Cedar Point, Ohio. It was about 10-13ft high, about 2 1/2 feet wide and it was shaped/pruned into a oblong (the the top straight across) and it was not a evergreen. Any ideas?

I don't really know what plant it might be. There are many evergreen shrubs that are suitable for topiary pruning in the manner you describe. Some of these plants have large leaves and some have small leaves - depending upon the effect you want. Check with your local nursery for a list of plants suitable for trimming into a topiary. Best wishes with your garden!
