I am trying to find a plant that is being used here. It has enormous jagged leaves of a bluish hue and grows to over 4 ft. in height and has a bloom resembling a thistle. Do you know what it is and where I can buy it?

What you describe could be almost any plant in the sunflower family, as well as many other families. Is what you're seeing an artichoke plant? The leaves are long and jagged and if the artichokes are not harvested while they are still closed, they will open into purple centered thistle looking flowers. You can find photos of opened artichokes on the internet. Best wishes with your search!
