My yuccas form the large stalk with the white bellish flowers. Once the flowers die - can I cut the stalk off - and where should I make the cut (as I don't want to form a second offshoot - as that appears to have happened on the one that I did cut) - please advise.

Certainly you can deadhead a yucca. Cut the bloom stalk off down low, close to the ground. The foliage portion of the plant will make offsets however, this is how it maintains the clump.
