I heard something about taking the leaves and closing them around the broccli itself and using a cloths pin to keep it closed? Is this accurate?

Closing leaves around the head is done with cauliflower heads because to stay white and tender, the sun has to be excluded. If exposed to sun, cauliflower turns yellow and develops a mealy texture. New cauliflower varieties have leaves that grow tightly around the cauliflower, although it doesn't hurt to check and make sure that all is well! Broccoli doesn't need this extra protection.
