Could you please tell me why my orchid has roots growing out of the stems my other one is normal with roots at the bottom.

What you describe is odd, but not unusual. Your orchid is producing offspring. You can cut the stem just below the root and pot it up, burying the root just beneath the surface of the growing medium. It should turn into a new plant.
