Cascabel peppers are mild to hot and dark green to red-brown when mature. Their name means rattle and they are usually dried. If you harvest when they're dark green, they'll taste mild. If you let them fully mature to the red-brown stage, they'll be hot. They take about 130 days to mature. Start seeds in moist potting soil in a warm location such as the top of the refrigerator. When they germinate, move them to a brightly lit area. Transplant to individual pots when they have two sets of leaves on them. Set them outdoors in the spring, after the weather has warmed.
