Our statice plant leaves are turning pink/red.

Statice leaves typically remain green, even when dried, so aside from improper growing conditions, I can think of no reason for the leaves to take on a reddish hue. You might have your soil tested to find out the pH level (anything too high or too low might bind up necessary nutrients such as phosphorous or potassium).
