| I would like to know your opinion of the best small chile to use in making herbal pepper vinegar. It has to be colorful, small enough to fit down the neck of a wine bottle and pretty hot. |
| We all have our favorites but I would have to go with 'Chiltepin' or "Bird's Eye" peppers. They are very small and very hot! I have also used 'Serrano', 'Thai Dragon', 'Fiesta', 'Cayenne Ultra', and 'Tabasco'. |
