Answer: There are two types of garlic, soft-neck (Allium sativum), and hard-neck (Allium ophioscorodon. Soft neck garlic has a longer shelf life and is a little easier to grow. Hard neck garlic can send a flower stem up in mid-season. Remove the stem so the plant spends its energy making cloves instead of flowers. The hard-neck type grows larger cloves.
