what is the best way to level established sod to that smooth golf course look

Steve,

If the surface of the soil is not too uneven you can topdress the turf with a sand or sandy loam mix an inch or so at a time using a rake turned upside down and moved like a shuffleboard stick to smooth it into the lower areas. After the turf fills in those areas more soil can be added repeating the process until the lawn surface is level.
