Sylvia, I am sorry for this delayed reply to your gardening question and hope it is still helpful to you. Most camellias grow 6 to 8 feet tall in a bushy form and would be okay for espalier training if the wall it high enough. Alba Plena (more open form) and Dahlohnega (slower growth)are two choices that may be workable for your wall. White Doves has low, spreading growth to 4 to 5 ft. tall and wider.
