Cupressus sempervirens 'Glauca' , the Blue Italian Cypress, is a narrow (3'), upright growing evergreen with a dense branching habit. Planted 3' apart they make a dense privacy screen. They are classified as having a medium growth rate, which typically means they will put on up to 12" a new growth a year. I wouldn't try to increase this - if plants grow too fast, the stems and trunk will be weak and susceptible to breakage in high winds.

Best wishes with your new plants!
