There are two schools of thought about wintering asparagus. Some gardeners remove the tops of the plants to discourage insect pests from overwintering, then lay a thick mulch over the crowns of the plants. Other gardeners leave the tops alone. They provide some protection to the roots over the winter months. The tops are then cut down to ground level when new shoots appear in the spring. Either way, the crowns are somewhat protected from winter cold.
