My new indoor date palm has a lot of roots coming out of the topsoil, should I cover these when I replant or leave them bare?

Surface roots can indicate your palm is potbound and the roots have nowhere else to go. When you repot, set the rootball deep enough so the surface roots are covered with barely an inch of potting soil. (Don't plant too deeply or trunk rot can develop.) Best wishes with your palm!
