How to prune fruit trees - Knowledgebase Question

I have three fruit trees that I planted 3 years ago. Last year they really grew (tall). I want to prune them but I am not sure how to do that. I have an apple tree (grafted multi-type apple tree), peach tree and a pear tree.

Also, when I prune, do I want to try to keep the middle of the tree limb free so the sun can get to the fruit better? Is it a good idea to get a limb spreader to help spread the main branches so the grow out more than straight up? Help!!!
