Is there anything I can do to prevent my brocolli plants from flowering so that I can harvest good heads?

Broccoli is a cool-season plant that will send out flowers if the weather becomes too warm. Sometimes it's best to plant the seeds in late summer so they'll be ready to harvest in the late fall. By subjecting them to coolish temperatures, they'll grow and mature to edible size without the problem of bolting.
