My Japanese Maple was fully leafed out when the cold spell tragically claimed it. What should I do? Will it re-leaf itself, or will I just have no leaves this year?

The weather has been so difficult this spring! It should be able to leaf out again, but it may take quite a while before it does. Be very patient waiting for it to do so. In the meantime do not be tempted to overfertilize it, there is really nothing you can do except wait and see.
