I love those bean sprouts they put in Asian food and spinach salads. What types of seed do they take and can you grow them inside during the winter?

You can grow sprouts anytime of the year indoors. If you have a seed sprouter, even better! Johnny's Selected Seed carries many seeds for sprouting, including bean. They also have alfalfa, broccoli, canola, red russian kale, onion, radish, and wheat...all are great for sprouting. They also carry the sprouter.
