I would like to know if there is hope for my burning bush and euonomous that has been chewed and eaten on the bottom and sides by rabbits?

Bunnies normally feed only on the lower portions of plants so whatever is left of your shrubs should recover and develop new leaves and stems. You can protect them from further attacks by setting chicken wire cylinders around them until they grow large enough that they won't be so attractive to your local bunny population.
