| Globe Artichokes (Cynara scolymus L.) do best in a frost-free area with cool, foggy summers. We do not have these conditions in Florida, but some artichokes are grown here. According to Jim Stephens, Professor, Vegetable Crops Department, University of Florida, it is best to plant portions of old artichoke rootstalk or root shoots. The artichoke can also be planted from seeds. The Jerusalem Artichoke (unrelated to the globe artichoke) is grown in Florida from tubers. Propagation is the same as for potatoes. It is grown as an annual, but it is actually a perennial. Tubers can be saved from year to year and planted, but rootstock is difficult to maintain because of our mild winters.
