The issue with oak trees is that volunteer trees will have a very long tap root. Usually as long as the seedling is tall. When you're digging, you may be severing the tap root. The best way to dig and transplant oaks is to expect the tap root on the seedling to be nearly 12" deep and dig accordingly.

Best wishes with your endeavor!
