My friend and I both had the same problem last year with our chives. (2 locations.) I took some of her mature chives and when they came back they were flat not hollow and lost their onion taste and smell. This year I dug them up and they had bulbs about 1 inch wide. Did they turn into onions? This happened to both of us

In my experience, chives stay consistent from year to year, and even the seedlings are consistent. Garlic chives have relatively flat leaves and white flowers, but still have small bulbs. I suppose it is possible you have a related onion, they are very close botanically so seedlings could seem like chives.
