What is the best way to harvest mesclun/butter lettuce?

These loose leaf lettuces and greens can be harvested more than once by trimming them off very short while they are young. (You can use a scissors or sharp knife to cut them.) When they regrow, harvest again. Eventually they will become exhausted (or the weather will turn hot) and the regrowth will be poor or they will begin to bolt and set seed. Harvesting beginning early allows you to enjoy them earlier and over a longer period.
