Would a Burford or a Yaupon holly be better as a speciman tree in a west facing, full sun location?

Either would probably do fine. Yaupon is native to the Southwestern U.S., and 'Burford' is a variety of Chinese holly that prefers a northern or eastern exposure in warm, arid climates. Since you live in a sort of transitional climate for 'Burford', Yaupon is probably a better bet.
