Is ther any beneift to pinching off the buds of Campanula Sarastros before they bloom?

I can't think of any benefit to pinching off the flowers before they open. Campanula Sarastro has a natural branching habit so pinching it back won't promote better branching, it will just remove the beautiful flowers. I'd leave the plant alone, pinching off spent flowers throughout the season to encourage additional blooming.
