can I root roses from the leftover trimmings I get when I prune them?

Karen,

You can propagate a rose by tip cuttings dipped in a rooting hormone and placed in a moist well-drained rooting medium. Rooting will occur in about 2-3 weeks depending on cultivar and rooting conditions.
