What kind of plants do you recommend for planting around a pool. I'm concerned about the water splashing up on the plants.

I don't think you need to worry about the effect of chlorine on poolside plants. Unless large quantities of water are going to be splashed out of the pool and around the roots and on the foliage. Just be sure that the planters and soil mix have good drainage. You also might want to plant annuals, because then you will be replacing them every year, so you don't need to worry about the long-term effects.
