I read that you can grow a avocado plant from the seed. Can you do that with other fruits or vegetables seeds?

Off the top of my head the avocado seed is the only one that is started by suspending it above water. However, you can grow citrus tree seedlings, pineapple tops, and sometimes potatoes and garlic from your kitchen stock. You can also try planting seeds from fresh produce such as squashes, tomatoes, peppers, and so on. Many of the commercially grown varieties are hybrids so the resulting plants may not give predictable results or good quality harvests but it can be fun to see what happens.
