The stems of my daisy's seem to be dying and the stalks are falling over.

If the flowering stalks are falling over, they're not getting enough sunshine or they are getting too much water or too much fertilizer (which encourages fast, but sometimes weak growth). If you cut the spent flowers off your plants, they should produce new flowering stalks. Best wishes with your daisies!
