Herbs can be dried in the same basic manner. Cut stems early in the day. Wash them and pat dry thoroughly. Then lay out flat in one layer on a screen or rack for thorough drying, or tie up small bundles with rubber bands and hang upside down. Dry in a place with good air circulation out of direct light. You could also use a dehydrator and follow the instructions that come with it. After drying, put some in a closed container for a day and double check that there is no moisture condensing before you pack it all in jars or other containers. Enjoy!
