what time of the year are you to cut back/trim holy berry trees?

Kim,

You can trim a holly at pretty much any time. However keep in mind that berries form on last year's growth, not new growth. Thus heavy pruning will dramatically reduce berry production. This lighter trimming is best. Your plant should have berries on it now if is going to have a crop this year.
