I enjoy growing a lot of vines- mandevilla, passion plants, morning glory, etc. I would like to make my own trellis' and like the aged look of copper pipe. Would the use of copper be harmful to my plants?

Copper may very well inhibit the growth of the vines. Have you considered coating the copper with a sealer? There are many non-glossy varnish-like sealers that you can apply to the copper before training your vines to grow on and around them.
