Question: My red and yellow bell peppers take very long time to develop fully their colors. Is there anything that can be done to accelerate the ripening of such bell peppers? Vijay Mhetar College Station, TX

Answer: Red or yellow peppers ripening can be hastened by picking them when they are green ripe (full size), placing them in a paper bag with an apple, and placing the bag in a cool (50F), dark place. You'll shave one week off the normal 2-3 ripening time.
