Good Morning,
Should I cut off the flower stems after they've bloomed on my hostas?

Cutting off the spent flower stems is a great idea. It won't hurt your hostas and will make them look more attractive for the rest of the season. I cut mine down as far as possible; at least to the level of the foliage.
