If I seed with Kentucky Blue Grass seed, will it die in the summer and smother my St. Augustine?

If you want to overseed your St. Augustine, I'd suggest using perennial ryegrass. It will green up when temperatures are cool at just about the time your St. Augustine goes dormant. Then when the weather gets hot it will die out just about the time your St. Augustine is greening up. You'll need to mow it when it dies to remove the blades from the lawn. It shouldn't harm your St. Augustine.
