Our winter has been very mild thus far and my hyacinths are starting to come up already. (They normally aren't out until May.) It is supposed to snow and get very cold again soon. Is there anything that I can do to keep them from dying?

I don't think the snow will bother your hyacinths. Often snow is considered an insulator. They surely won't die...if they should freeze, just feed them well later in the spring and wait until next year. They should be fine.
