Anaheim are bright green to red, about 7 inches long, mildly pungent, and are used fresh, canned or dried. Chilies vary in the amount of heat they contain. Anaheim is rated at 1,000 to 1,500 heat units. Cayenne is about 35,000 heat units and Habaneros hit the top of the list at 150,000 to 350,000 heat units. The Anaheim is a good choice if you want just a little "bite" of chili in your food.
