Your class can plant peas now, as well as radishes and leaf lettuces. Radishes are the fastest-sprouting vegetables, and they reach maturity within about 25 days. The Easter Egg variety has oval radishes in shades of purple, pink, rose, and white, and is fun for kids. Leaf lettuces will sprout and be "baby lettuces" in about a month, but won't reach maturity until about 45-50 days. Green beans are fun to grow, as well. For fun, you might also plant marigolds (which will help repel pests). Good luck with your project!
